A really easy group pleaser, or you can scale it down for an individual. Also, you can add extra seafood or sub seafood making it incredibly versatile! Think of it as a great template for a quick, cheap, easy dinner.

Ingredients

  • 1 pound bay scallops (and any other seafood such as chopped raw white fish, salmon, peeled shrimp, etc… if you have more than 2 pounds of seafood, scale up the other ingredients)

  • 1 Pound raw peeled and deveined shrimp, cut to the same size as the bay scallops

  • 1 Package Imitation Crab (12oz. usually, up to 1 pound is great)

  • Oil to prevent sticking while sautéing

  • 1 pound mushrooms sliced

  • 1 large onion sliced about 1/4 inch thick

  • Garlic salt to season while sautéing

  • 3-4 tablespoons Kewpie mayo (or regular if Kewpie is unavailable)

  • 1 Tablespoon Soy Sauce

  • 1 Tablespoon Mirin

  • 2 Teaspoon Sesame oil

  • 2 Teaspoons Lemon Juice

  • 1 Teaspoon Rice wine vinegar

  • 2 green onions sliced thin and divided in half

  • Pepper

Directions

  • Set rack about 6 inches from broiler
  • Preheat oven to broil
  • Set aside a medium-large Pyrex glass baking dish (If you don’t have a Pyrex, any over safe container of a similar size will work) next to the stovetop
  • Heat a large skillet over high heat
  • Add mushrooms and oil if using once the pan is smoking hot and toss to coat then even the mushrooms out in the pan and don’t touch for 1 minute so they can pick up some color. Add garlic salt and toss the mushrooms, again leave for 1 minute, once they are uniformly browned set aside in the Pyrex, if not repeat until browned then set aside
  • Add onions and repeat the same process as the mushrooms (including adding garlic salt to season) until golden but not wilted, and then set aside in the Pyrex.
  • Add the scallops and season with garlic salt then toss rapidly for 1 minute, the seafood won’t be fully cooked but will finish under the broiler, so at this point add to the Pyrex with the mushrooms and onions. Repeat the process with the Shrimp (including seasoning with garlic salt) adding to the Pyrex after approximately one minute. You can warm up the Imitation crab in the pan, but there is no need since it is fully cooked and will get warmed under the broiler.
  • Add half the sliced green onion to the Pyrex. In a separate bowl Add 3 TBSP Mayo, the Soy Sauce, Mirin, Sesame oil, Lemon Juice, and Rice wine vinegar and mix till smooth. Add this sauce to the seafood and vegetables in the Pyrex if not creamy add more mayo and mix 1 TBSP at a time.
  • Place the Pyrex in the oven and cook 5-10 minutes, or until golden brown on the top
  • To serve, top with remaining green onion and put a portion scooping all the way to the bottom on top of rice, riced cauliflower, even mashed potatoes, or eat straight up!
