Schug (Yemenite Hot Sauce)
Course: Side, SauceCuisine: Yemenite, Israeli, ArabicDifficulty: EasyHot, Spicy, Floral, Fiery… This traditional Yemenite Hot Sauce is popular all over the middle east, and this is my favorite version of it!
Ingredients
10 Jalapenos
8 Fresh Cloves Garlic peeled
2 Bunches Cilantro
1 tsp Cumin
1 Tbsp Salt
2 Tbsp Olive Oil
Directions
- Wash the Cilantro, Jalapenos, and Garlic.
- Use a Salad Spinner to dry the above ingredients separately (if you don’t have a salad spinner, dry with clean dish towels).
- Add the Garlic and Salt to a food processor and run till smooth (if you don’t have a food processor chop then crush by hand till a fine paste forms)
- Scrape down the sides of the food processor bowl and add the Jalapeno’s and run till smooth, then add the Cilantro and run till smooth, scraping down the sides a few times, add one Tbsp olive oil and run till incorporated. (If you don’t have a food processor, chop until its beyond minced, then stir in the garlic and cumin and 1 Tbsp Olive Oil)
- Put into a jar or other storage container and top with the remaining 1 Tbsp Olive Oil
