Peruvian(ish) Chicken with Green Sauce

This chicken is insanely good. It is moist, juicy, perfectly seasoned, and—most importantly—it passed the ultimate, high-stakes test: My three-year-old ate it.

Let’s address the elephant in the room: The word “moist” makes everyone uncomfortable. It’s a terrible word (for some). But I am forced to use it here because “hydrated chicken” is even worse and sounds like a science experiment.

If you have a toddler, you know their sophisticated palate usually oscillates between “plain cracker” and “floor Cheerio.” So when everyone at the table, including the tiny tyrant, polished this off, I knew I had a winner.

The Flavor & The Magic Box The flavor profile is heavily inspired by Pollo a la Brasa (Peruvian Rotisserie Chicken), but I’ve taken some liberties and invited a few other South American spices to the party. It’s savory, smoky, and has just enough kick to be interesting without scaring off the kids.

But the real MVP here is the Air Fryer. It takes this meal from “I guess we’re having chicken” to “gourmet dinner” in less than 20 minutes. It gives you that rotisserie-style finish—crispy on the outside, tender on the inside—in the time it usually takes to preheat a regular oven.

Ingredients

  • Chicken
  • 1 -2 Pounds boneless chicken thighs (I used 6 Thighs)

  • 2 heaped tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 3 garlic cloves, grated or crushed

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 Tsp Salt (or salt to taste)

  • Sauce
  • 1/4-1/2 bunch fresh cilantro

  • 1 green jalapeño chilli (roughly chopped, with seeds)

  • 2 garlic cloves

  • 150g Greek yogurt

  • Juice 1 lime (or 2 Tbsp lime juice)

  • 2 tbsp olive oil

  • 3/4 tsp kosher salt

Directions

  • Chicken
  • Place the chicken thighs in a large mixing bowl and add the seasonings, olive oil and honey and massage to mix and coat. (I like to do this step in the morning and leave it in the fridge to marinate till just before cooking dinner, if you marinate in the morning, this is a great time to make the sauce as it gets better as it sits in the fridge!)
  • Preheat your Air-fryer to 375 degrees. Lay out the seasoned chicken in the air-fryer basket or suspended on a rack above a pan and air-fry for 15 minutes at 375 degrees. If using an air-fryer basket, flip over halfway through.
  • Green Sauce**
  • Add all the ingredients for the green sauce in a blender and blitz until completely smooth.
  • Serving
  • Once the chicken is cooked, slice it up and serve on a bed of rice, quinoa, or if you wanna go truly authentic french fries. Liberally drizzle the green sauce all over and enjoy while warm (If your toddler is sensitive to spicy, skip this…) Then serve with extra sauce on the side, because it’s so good you might just drink it up!).
